For frequently opened and closed jars, use the glass lids alone; for long-term storage, use the gasket and clips. 1. "Boiling Containers": Before jarring, thoroughly wash the jars, glass lids, rubber gaskets, and stainless steel clips you'll be using for storage. Then, check the containers for scratches or cracks. Sterilize them by boiling water or lukewarm water in a large pot for about 5 minutes, then dry them on a cloth and drain thoroughly. 2. "Preparing to seal" After placing the lid with the gasket on the jar containing the food, secure the jar and lid in two places with stainless steel clips. Now you're ready to boil the food. 3. "Boiling" Don't turn the heat on high all at once, start with low heat and heat slowly. Once the temperature specified in the recipe has been reached, boil thoroughly for the specified time.
